TWD Savory Muffins

 

Looking forward to a change of pace, this weeks recipe from EZRA POUND CAKE was corn and pepper muffins.  Many comments suggested that this would be a perfect partner to Chili.  Having never made either, I thought, why not? 

The muffins were a cinch to put together, but because hubby and the toddlers aren't fans of spicy foods, I left out the jalapeno (boo hoo...I LOVE hot food!) and was sorely missed.  There was just something missing (ahem - the jalapeno!!) and next I would DEFINITELY not leave it out. 

Sorry - had to include this to prove that I can cook and keep a relatively clean counter =)

They did go well with the Chili though, so thanks all for the great tip!!

I love heat too! I didn't think they were too spicy really even with the jalapeno - but someone who doesn't want that heat would probably notice it! Maybe next time you could divide the batter and just add in a bit of the pepper! :) Looks awesome and great job at keeping a clean counter!

I skipped the jalapeno, too for the sake of the kids. And then, of course, they didn't want any. They were really good though, and a perfect match for the chili.

These were wonderful! I did the "playing around" version and threw in a glob of sour cream. They were delicious! I might have to try the full flavored version next time!

I love spicy foods, to and I also left out the jalapeno and regretted it. I'm glad you liked them with the chili.

I don't like really hot foods, so I left out the jalapeño and didn't miss it. I'm looking forward to summer when we grow our own milder jalapeños -- good flavor and only a touch of heat, perfect for wimps like me! If you can find any at a market, do try them.

How brave of you to try two new recipes at the same time! They look like they were both great. I am a scaredy-cat when it comes to hot foods but I left everything as is (used canned corn) and they were not too spicy for me at all; hope you get to try them that way soon.

I skipped the hot pepper as well. Wouldn't have hurt to have it in.

I'm with you on the hot food thing - I'm thinking next time of habaneros instead of the red bell pepper. Just for fun.

You keep a much cleaner kitchen counter than me, fuh sho. These were so good with chili. And the jalapeno was pretty time. They might not have noticed ...

They look great! I only used half of a jalapeno and I didn't think they were hot at all. I'd use a whole one next time.

Also left out the hot stuff, but the muffins were really good anyway. Yours look perfect.
